This Dorito Chicken Casserole was a huge hit with my family. A creamy chicken base topped with Dorito chips then baked. I knew my kids would love this since they love my recipe for Ritz Cracker Chicken Casserole so much and this is pretty simple.

I’m sure you could have guessed just by the name that this Dorito Chicken Casserole was a huge hit with my kids.
I used cooked and shredded chicken to make a creamy chicken base than before baking I topped it with shredded cheese and crushed Dorito chips.
Everyone loved it! Plus, it’s simple to make and simple to clean up, which mean I loved it also.

Ingredient Notes:
- Chicken Breast – That has been cooked and shredded.
- Cream of Chicken Soup
- Sour Cream
- Rotel – this is canned tomatoes and green chilies. You want to drain these before using them.
- Corn – canned corn that has been drained.
- Cheese – I use shredded Colby Jack for this recipe but you can also use cheddar.
- Dorito Chips – that have been crushed.

Dorito Chicken Casserole Directions:
Step One – Start by preheating your oven and then go ahead and prepare a casserole dish with nonstick cooking spray and set aside.
I used a 9×13 casserole dish for this recipe.
Step Two – Mix your cooked and shredded chicken, cream of chicken soup, sour cream, drained Rotel, drained corn, and 1 cup of your shredded cheese.

Once well combined place this in your prepares casserole dish.
Recipe Tip
To save yourself some time you can make your chicken in the slow cooker and then shred it and use it when it’s time for dinner. I use this recipe, All-Purpose Slow Cooker Chicken. You can even make enough for several recipes in your slow cooker and store it in the fridge until you are ready to use.

Step Three – Once you are ready to bake then top your casserole with the remaining 1 cup of cheese and then your crushed chips.
Bake until warm throughout and cheese is melted.

How to make this ahead of time:
You could easily make this recipe ahead of time and bake when you are ready to serve it.
Once you have all your ingredients in step two mixed together place it in a freezer or fridge safe casserole dish.
Place in the fridge or freezer without the chips. When you are ready to bake then allow to thaw in the fridge overnight then place the chips on top right before baking.
- Fridge: Keep in the fridge 1-2 days before cooking and serving.
- Freeze: You can keep this in the freezer for 4-6 months then place in the fridge to thaw overnight. Follow step three when you are ready to bake and add more time as needed to make sure the entire casserole is warm.

Dorito Chicken Casserole
Ingredients
- 2 cups chicken breast, (cooked and shredded)
- 21 oz cream of chicken soup, (2 cans)
- 1 cup sour cream
- 10 oz rotel, (drained)
- 16 oz corn, (drained)
- 2 cups Colby jack cheese, (shredded)
- 10 oz Dorito chips, (crushed)
Instructions
- Preheat oven to 350 degrees. Prepare a casserole dish with nonstick cooking spray and set aside.
- In a mixing bowl mix your cooked and shredded chicken, cream of chicken soup, sour cream, drained Rotel, drained corn, and 1 cup of your shredded cheese. Once well combined place this in your prepares casserole dish.
- Top your casserole with the remaining 1 cup of cheese and your crushed chips. Bake for 15 minutes or until warm throughout and cheese is melted.

Since it’s only my husband and I, I cut the recipe in half and it was perfect. We ate out on our screened in porch and when Jack had cleaned his plate he said “I’m going in to get a little more” and he did, so I know he really liked it. The one thing I would do from now on would be to warm the mixture in the oven for 15 minutes or so before adding the cheese and chips and returning it to melt the cheese as the interior of the casserole wasn’t very warm. Since I had cut the recipe in half, I can only imagine that the full recipe in a larger casserole dish would be even cooler than ours was.
Okay so I ended up making it tonight and I did use cream cheese instead of sour cream, I also added a little milk and a pkt of taco seasoning and it was DELICIOUS!!!!!!

Can I substitute the sour cream for cream cheese???
Hi Rachael, I have not tried this recipe with cream cheese but it could work. Sorry I don’t have an answer for you maybe someone else has tried that and can let you know.
Should you cover the pan with aluminum foil when cooking?
I don’t cover while baking but it would not hurt.
We loved this Dorito chicken casserole. It was super flavorful and not a bit leftover.

I have been making a recipe almost exactly like this for for over 26 years!!
I do make a few changes so I wanted to share these Incase anyone would be interested!!
-I add 1 or 2 cans of pinto beans
-I add a small can of sliced black olives
-I usually make this with ground beef that I have cooked with onions and some taco seasoning
-I use 2 regular size bags of Doritos. I put a layer of chips on the bottom of the pan
-This usually makes the large Pyrex dish and also a small Pyrex dish
-I use 8-16oz of sour cream ~ depends on how strong of a taste you want
-I use fiesta blend grated cheese.
-I put a big handful of cheese into the mixture and top it off with more cheese onto of the Doritos
-I add a 4oz can of green Chiles
This is a wonderful basic recipe that you can add to or or not add stuff to!! Make it to the taste you want!!
-Leftovers to me are ok. Not perfect because of the chips but I always end up with empty dishes!!

Very tasty but there is no way 15 minutes in the oven is enough baking time to get the dish to a temperature one would desire for a casserole.
Since my chicken was warm and almost all other ingredients room temp it was the perfect time for us. How long until you found it to be warm enough?
