This Dorito Chicken Casserole was a huge hit with my family. A creamy chicken base topped with Dorito chips then baked. I knew my kids would love this since they love my recipe for Ritz Cracker Chicken Casserole so much and this is pretty simple.
I’m sure you could have guessed just by the name that this Dorito Chicken Casserole was a huge hit with my kids. I used cooked and shredded chicken to make a creamy chicken base than before baking I topped it with shredded cheese and crushed Dorito chips. Everyone loved it! Plus it’s simple to make and simple to clean up, which mean I loved it also.
Dorito Chicken Casserole Directions:
Step one: Start by preheating your oven and then go ahead and prepare a casserole dish with nonstick cooking spray and set aside. I used a 9×13 casserole dish for this recipe.
Step two: Mix your cooked and shredded chicken, cream of chicken soup, sour cream, drained Rotel, drained corn, and 1 cup of your shredded cheese. Once well combined place this in your prepares casserole dish.
- Cooking Tip: To save yourself some time you can make your chicken in the slow cooker and then shred it and use it when it’s time for dinner. I use this recipe, All-Purpose Slow Cooker Chicken. You can even make enough for several recipes in your slow cooker and store it in the fridge until you are ready to use.
Step three: Once you are ready to bake then top your casserole with the remaining 1 cup of cheese and then your crushed chips. Bake until warm throughout and cheese is melted.
How to make this ahead:
You could easily make this recipe ahead of time and bake when you are ready to serve it. Once you have all your ingredients in step two mixed together place it in a freezer or fridge safe casserole dish. Place in the fridge or freezer without the chips. When you are ready to bake then allow to thaw in the fridge overnight then place the chips on top right before baking.
- Fridge: Keep in the fridge 1-2 days before cooking and serving.
- Freeze: You can keep this in the freezer for 4-6 months then place in the fridge to thaw overnight. Follow step three when you are ready to bake and add more time as needed to make sure the entire casserole is warm.

What’s a serving size
Could you add rice to this? How would you?
You could. I would serve with rice and just spoon the casserole on or you can cook the rice and mix it in with everything else before baking.
Do you think adding corn and black beans would be okay? I don’t think it would change the taste but definitely want to be safe!
I don’t think it would change it too much and would work!
So yummy
Can you put it together the night before and put the doritos and cheese on when your ready to cook it?
Yes!
Could you leave out the tomatoes? Do you have any suggestions for a substitute? TIA
You can probably just leave them out maybe just add more corn instead. The Rotel tomatoes do add a lot of flavor so I would also suggest adding some other seasoning in it’s place.
Hello,
I made this for dinner tonight and I added bacon in with the chicken. It was a big hit!
Thank you
Darlene Brinkman.
That sounds pretty good!
So good and so easy!
Thanks Kara!
Making this tonight for some guests (I’ve made it before and we all love it exactly as is!) – can you recommend what would be some good sides? Hopefully I didn’t miss that part when reading through the post – sorry if I did!! Thanks in advance!!
Sorry, I’m just now seeing this. I usually serve it with salad or steamed veggies.
I’m going to try this recipe soon.I’m gonna cook my chicken in the pressure cooker and see how it works.
What Dorito’s do you use and do you think you could change up the Doritos (eg. Cool Ranch or Taco flavors)?
I use just regular, original Doritos. Yes, you definitely could try a different flavor if you wanted. I bet Cool Ranch would be great!
MY family loves this recipe! The ONLY change I make is that I use salsa instead of Rotel. THERe is a brand called Red Cactus that is a little sweet and great if you have heartburn from regular salsas. I make 2 every time. THe Red Cactus for the females that all like mild and then a Ghost Pepper salsa with spicy Doritos .
Glad to hear you and your family love this recipe! The spicy option does sound hot!
