This simple breakfast recipe is a favorite of mine. Warm and fluffy, the perfect sweet and savory combination. These Mini Sausage Pancake Muffins make the perfect easy breakfast recipe.
My kids love pancakes! It's definitely one of their favorite breakfast recipes. Not much beats a pancake breakfast but for those quick mornings, these pancake mini muffins are my go to! No standing and flipping by the oven. I fill the muffin tin with my pancake mix and bake. For this recipe, I just add cooked ground breakfast sausage to each muffin and then we dipped them in syrup.

I really didn't change my batter much when making these then what I use for typical pancakes. They bake perfectly and come out fluffy and soft. Adding the sausage just made them even better. A full breakfast in every bite!
How to make Mini Sausage Pancake Muffins:
Step one: Start by preheating your oven and preparing a mini muffin tin with nonstick cooking spray.
Step two: Cook and crumble sausage. Once it's cook then drain the fat.
Step three: Sift together flour, baking powder, baking soda, and sugar.
Step four: In a separate bowl beat egg then add milk and melted butter.
Step five: Now mix together wet and dry ingredients.
Step six: Pour pancake mix into mini muffin pan then add a spoon full of cooked sausage.
Step seven: Bake until cooked through.
I started by serving these with syrup on the side for dipping but not doing that again for my toddlers.
I mean why I thought it would be a good idea to give a 3 and 5-year-old a bowl full of sweet sticky syrup and not think they would be dipping and licking fingers, I have no idea.
My husband and I will still dip but maybe for them just a tablespoon or two on top. Still a little messy but at least they have to eat the pancake to get the syrup.
As much as my kids love pancakes they couldn't pass up a chance to just eat a fist full of syrup. I even had some readers say they added it to the muffin mix before baking. This way you get the syrup taste without the sticky mess.
Mini Sausage Pancake Muffins
Ingredients
- 1 pound Ground breakfast sausage
- 1 cup Flour
- 1 teaspoon Baking powder
- ½ teaspoon Baking soda
- 1 tablespoon Sugar
- 1 Egg
- 1 cup Milk
- 1 tablespoon Butter (melted)
Instructions
- Preheat oven to 400 degrees F and prepare a mini muffin tin with nonstick cooking spray.
- Cook sausage. Crumbling with a spatula until fully cooked. Drain fat and set aside.
- Sift together flour, baking powder, baking soda, and sugar. In a separate bowl beat egg then add milk and melted butter. Now mix together wet and dry ingredients.
- Pour pancake mix into mini muffin pan then add a spoon full of cooked sausage. Bake for 10-12 minutes. Remove from oven and allow to cool for 1-2 minutes.
- Optional: Serve with maple syrup.

Can I substitute Almond Flour for regular flour?
You definitely can. I do not cook regularly with Almond Flour so I do not know exactly how it cooks and handles, but if you are familiar with how Almond Flour works, I'm sure it will be fine!
Have made these a few times now and they are so good. I've done some variations. I've tried using crispy bacon pieces in place of sausage and I've added maple extract to one batch and I've also sprinkled maple crystals on top as well, all to great results. I made these and doubled the recipe. Was runny so I added 4 large spoons of bisquick. Was not brown on top but were good
Can you freeze and reheat?
Yes! Once cooled allow them to freeze separately on a baking sheet then toss them all in a freezer bag and pull them out and reheat as needed.
Would you be able to make these ahead and freeze them? I was thinking about hectic school mornings and trying to get everyone out the door quickly.
I have not tried freezing these yet but I would guess they would work great! If you google how to freeze pancakes it should work for these also!

Yes these can be made in a regular muffin pan just add more time to cook.

Yes, you could use a pancake mix! The cooking time could change so keep on eye on them closer to time.

I was wondering if if baking would change too much if you mix the sausage in and pour into the muffin pans instead of adding sausage to each.
I don't think it would change it much as long as you make sure all grease is drained well.
I made mini pancakes with sausage and shredded mozzarella cheese mixed in with the batter and instead of a bowl of syurp I put a dollop of apple butter on top

I have yet to try it with those in the muffins but I think bacon would be a good sub for the sausage. The eggs may change the way it bakes to much.

I have to say, I was skeptical, but these were FANTASTIC! They will definitely be added to my regular menu! They didn't take long at all, and I'm actually going to make a couple more batches today so I can freeze them. I put a squirt of syrup right on top, and they were absolutely perfect and no additional syrup needed! YUMMO!

If you make these in a regular muffin tin I would use the same ingredients and it will make 12 muffins. Also you want to add a few more minutes to cook it.

I made these using instant pancake mix, and before adding the water, I added melted butter and sryup. Adding the sryup eliminated the need of serving on the side. I also made some using crumbled bacon and they were just as good. Enjoy!!

Oh, Duh, I just noticed it was mini muffins. Don't have that pan. Can this be done as regular muffins?
Yeah it can be done with regular and the same recipe should make 12 regular muffins. You just might need to add some cook time to cook through a bigger one.

Yes I think they would. You would want to place them all on a baking sheet and then into the freezer to freeze separately. Then toss them in a freezer bag. This way you can pull out one at a time and they don't all freeze together.
