Blueberry Pancakes and Homemade Blueberry Syrup
Fruit and pancakes are the best things EVER! If could serve up these pancakes every weekend I would. But to tell you the truth my husband hates blueberries. He's a strange one for sure. I actually ended up making these for dinner one day for me and the kids when my husband was working. They loved it and I got my blueberry pancake fix.

Making Blueberry Pancakes and Homemade Blueberry Syrup:
Let's get our pancakes ready. Start by sifting together the flour, baking powder, baking soda, and sugar. In a separate bowl beat egg then add milk and melted butter. Now mix together wet and dry ingredients. Heat a frying pan with a small amount of butter. When your pan is at a heated up pour a small amount of batter, about ¼ cup. This recipe should make around 6-8 pancakes but it also depends on how much batter you are using on each. When you see bubbles forming on your pancake it's ready to be flipped! Drop in a few blueberries then flip. Cook each side until cooked through. Now to get your sauce ready. Bring all ingredients to a boil in a saucepan on medium heat. Reduce heat and allow your syrup to simmer for 10-15 minutes until it has started to thicken stirring it often. Pour this over pancakes and enjoy.
Cooking Tip:
Maple syrup is optional for your blueberry syrup recipe. I love the maple flavor with the blueberry so I love adding ½ a cup to my blueberry syrup. If you are worried it will be too sweet you can add a little less sugar or add to taste.

Pancakes:
- 2 cups Flour
- 2 teaspoons Baking powder
- 1 teaspoon Baking soda
- 2 tablespoon Sugar
- 2 Eggs
- 2 cups Milk
- 2 tablespoons Melted butter
- ½ cup Fresh blueberries
Blueberry Syrup
- 1 cup Water
- 1 cup Sugar
- 1 cup Blueberries
- ½ cup Maple syrup (optional)
Instructions
