The best pancake breakfast recipe EVER! These Blueberry Pancakes are perfect for weekend breakfast with the family. Serve with homemade Blueberry Syrup!
Fruit and pancakes are one of the best things EVER! If I could serve up these pancakes every weekend I would. But to tell you the truth my husband hates blueberries. He’s a strange one for sure.
I actually ended up making these for dinner one day for me and the kids when my husband was working. They loved it and I got my blueberry pancake fix.
I even have my recipe for Homemade Blueberry Syrup below as well to even add more blueberry goodness to this recipe.

How to make Homemade Blueberry Pancakes:
This recipe is basically following along with my famous Pancake Recipe and adding delicious and juicy blueberries to it.
Heat up your griddle or skillet and mix up the batter. Pour the pancake batter in and add your blueberries then.
Cook and flip then stack them high and serve with butter and syrup!
Ingredient Notes:
- Flour: I use All Purpose Flour for these pancakes.
- Baking Powder and Baking Soda: This helps the pancakes be light and fluffy.
- Sugar: Standard white granulated sugar.
- Eggs
- Milk: I use 2% milk but any milk you have on hand and enjoy will work.
- Melted Butter: I used salted butter for this recipe.
- Fresh Blueberries: fresh is better than frozen but you can use frozen if you want.
Directions:
Step One (a)- Sift together flour, baking powder, baking soda, and sugar.
Step One (b) – In a separate bowl beat egg then add milk and melted butter.
Step One (c) – Now mix together wet and dry ingredients.
Step Two – Heat a frying pan with a small amount of butter or oil.
When your pan is heated up pour a small amount of batter on to the pan, about ¼ cup.
Step Three – When you see bubbles forming on your pancake it’s ready to be flipped! Drop-in a few blueberries then flip.
Cook each side until cooked through. Serve with maple syrup or make your own blueberry syrup. See the recipe below for the blueberry syrup.
Serving Tip:
Maple syrup is optional for your blueberry syrup recipe.
I love the maple flavor with the blueberry, so I love adding 1/2 a cup to my blueberry syrup.
If you are worried it will be too sweet, you can add a little less sugar or add to taste.
Try serving it with a Blueberry Syrup:
You can serve these pancakes with maple syrup or try making a homemade blueberry sauce to go on your pancakes. It is really tasty and easy to make.
Blueberry Syrup Ingredients:
- 1 cup Water
- 1 cup Sugar
- 1 cup Fresh Blueberries
- 1/2 cup Maple Syrup (optional)
How to make Blueberry Syrup:
Step One – Bring all ingredients to a boil in a saucepan on medium heat.
Step Two – Reduce heat and allow your syrup to simmer for 10-15 minutes until it has started to thicken stirring it often.
Step Three – Pour this over the pancakes and enjoy.

I however like to keep my own premade and homemade Pancake Mix on hand. it’s just as easy as using a store-bought box of pancake mix.

Ingredients

- 2 tablespoon Sugar

- 1/2 cup Fresh blueberries
