    Stuffed Pepper Soup

    I loved this Stuffed Pepper Soup recipe! It was simple to make and taste amazing. It's made with ground sausage, peppers, onions, and tomatoes. All seasoned then cooked on the stove top. 

    Stuffed Pepper Soup

    Soup is one of my favorite foods. I could eat it just about every day and I do eat it just about every day. This Stuffed Pepper Soup is made with ground sausage and rice along with diced bell peppers it taste just like a stuffed pepper. 

    Making Stuffed Pepper Soup:

    Step one: In a large soup pot cook and crumb ground sausage. Add in onions and green pepper then cook until translucent. Once everything is cooked drain fat.

    Step two: Add to your pot the tomatoes, seasonings, and both. Bring to a boil and then reduce to simmer, cover, and allow to simmer for 30 minutes.

    Step three: Cook rice according to package directions. Add cooked rice to your soup and mix in well then serve.

    Stuffed Pepper Soup

    Slow Cooker Instructions:

    This recipe can be easily moved to the slow cooker but you will still need to cook your sausage and rice on the stove top.

    Start by cooking and crumbling your sausage in a large skillet. Drain the fat and add it to your slow cooker. Add all remaining ingredients except for the rice. Allow cooking in your slow cooker on low for 4-5 hours or in high for 2-3 hours. Add in cooked rice to your soup once done with cooking and serve.

    Freezing Instructions: 

    To freeze this recipe I would suggest doing it without the rice and adding that later. Rice will soak up a lot of the broth when sitting and can get mushy. Stop at the step before you add the rice and allow your soup to cool. Place in a large freezer bag and freeze for up to 3 months. When you are ready to cook allow it to thaw in the fridge overnight then heat on the stove top. Add in cooked rice when ready to serve.

    Ingredients
      

    • 1 pound Italian ground sausage
    • 1 small yellow onion
    • 1 ½ cups green bell pepper (diced)
    • 28 oz crushed tomatoes
    • 30 oz diced tomatoes
    • 1 teaspoon thyme (dried)
    • 1 teaspoon oregano (dried)
    • ½ teaspoon basil (dried)
    • ½ teaspoon salt
    • ¼ teaspoon pepper
    • 3 cups vegetable broth
    • 1 cup long grain white rice (uncooked)

    Instructions
