    Tater Tot Chicken Pot Pie

    This Tater Tot Chicken Pot Pie is AMAZING! One of my favorite recipes with all the classic pot pie flavor but done in a new way.

    Chicken pot pie is such a classic! My family loves it in every form and my Biscuit Chicken Pot Pie Casserole quickly became a favorite with my readers, or try my new Turkey Pot Pie, which is amazing! This is the perfect dinner served along with a side salad and I like serving my Peach Cobbler for dessert.

    How to make Tater Tot Chicken Pot Pie:

    This is a pretty straight forward recipe. Dice and cook your chicken, then mix in your remaining ingredients. Layer into a casserole dish and top with the tater tots. Easy to make and tastes great! Enjoy!

    Ingredients:

    • Frozen Tater Tots
    • Chicken Breasts (skinless and boneless)
    • Unsalted Butter
    • Onions (diced)
    • Cream Cheese (cut into cubes and softened)
    • Cream of Chicken Soup
    • Salt
    • Pepper
    • Dried Thyme
    • Mixed Vegetables (frozen)

    Directions:

    Step one: Get started by preheating your oven to 400 degrees F. Then prepare a 3-quart baking dish with nonstick cooking spray.

    Step two: Next melt your butter in a large skillet over medium heat. Then dice chicken into bite size pieces and add to skillet. Cook until no longer pink then add in diced onions. Cook everything until the chicken is cooked through and onions are tender.

    Step three: Over low heat add cream cheese and cream of chicken soup to your skillet with chicken. Season with salt and pepper to taste then add in dried thyme. Once season add in frozen mixed vegetables.

    Step four: Last add everything from the skillet to your prepared baking dish. Then top your casserole with frozen tater tots.

    Baking Instructions:

    Step five: When your casserole is ready place it in the oven to bake for 35-40 minutes or until casserole is warm throughout. Serve warm and enjoy.

    Make-Ahead Directions:

    To prepare this the day before follow the directions until step three. Place your filling in the fridge in an airtight container for 2-3 days. When you are ready to bake add it to your casserole dish and top with tater tots. Then bake according to the directions.

    Ingredients
      

    • 4 tablespoons unsalted butter
    • 1 pound chicken breast (skinless and boneless)
    • 1 cup onions (diced)
    • 4 oz cream cheese (cut into cubes and softened)
    • 21 oz cream of chicken soup (2 cans)
    • salt and pepper to taste
    • ½ teaspoon dried thyme
    • 12 oz frozen mixed vegetables
    • 32 oz frozen tater tots

    Instructions

      Kids Love it! We put a puff pastry on bottom of pan. I recommend crispy crowns on top
