    Yellow Cake Batter Christmas Cookies

    The easiest cookie recipe ever! These Yellow Cake Batter Christmas Cookies taste amazing and are made with a box cake mix.

    East Christmas Cookies

    During Christmas time I make a lot of cookies. This one is so easy to make and taste amazing. If you need a quick cookie recipe this one is the one you are going to want. 

    Ingredients

    For this recipe you just need a few simple ingredients.

    • Yellow cake mix (use whatever box you usually buy)
    • Eggs
    • Oil (You can use any oil you have in your house but this recipe we prefer vegetable oil)
    • Sugar
    • Vanilla extract
    • Sprinkles (any types of sprinkle that you like will work for this recipe. You can get the same sprinkles as us here, Christmas sprinkles.)

    How to make Yellow Cake Batter Christmas Cookies:

    Step one: Start with a large mixing bowl. Combine cake mix, oil, eggs, and vanilla extract.

    • Can I use other cake mix flavors? Yes this recipe will work on just about any cake mix. We also love using chocolate or red velvet.

    Step two: Place dough in the fridge to chill for 1 hour.

    • Do I have to chill? Yes chilling is very important for this recipe. It helps your cookies hold shape while baking.

    Baking Instructions:

    Step three: Next preheat your oven to 350 degrees. Then prepare a baking sheet with parchment paper.

    Step four: Roll cooking dough into balls then roll into sugar and place on your prepared baking sheet.

    Step five: Top cookies with Christmas sprinkles and bake for 9-10 minutes. Allow to cool for 1 minute on the baking sheet then remove and cool completely on a cooling rack.

    Storing Cookie Dough/Cookies

    This is a great recipe to prepare ahead of time and bake later. You can store this cookie dough in the fridge in an airtight container for up to 2 days.

    Then continue with the baking instructions. If you want to go ahead and make the cookies then keep in an airtight container for 5 days.

    Tips

    • Keep a close eye on these cookies and make sure to not over bake. They can easily be over baked and all continue to bake slightly on the pan once removed. Make sure to remove them after just one minute from cooling on the pan.
    • Change up the sprinkle color to go with any occasion or add in chocolate chips instead.

      I tried these with a yellow gluten free cake mix from Aldi because after trying as a cake my family did not like. I used butter instead of oil and rolled in cinnamon and sugar. They were a hit! So soft, chewy and delicious!
