I found this recipe years ago in my grandma‘s cookbook and we love it! The only difference is the Ritz crackers are spread on the bottom as well as the top and water chestnuts are added. Seems weird but add that crunch and really good.
Thanks Lori! So glad you liked it so much.
added frozen mixed vegetables and can of mushroom soup and a a cup chicken broth
Those sound like great additions!
Love this chicken casserole with the ritz crackers. Yummy!
Thanks Valerie, I’m so glad you like it.
Simple recipe turns into amazing chicken dinner. I served it with fresh vegies from my garden.
I’m so glad you liked it Dottie!
very good recipe. I love the chicken Ritz crackers casserole. I made one today and put cooked rice on the bottom and then the rest of the ingredients.
Thanks Carla!
I made with Campbell Cream of Chicken with herbs and added a drained can of Veg-all because to me this casserole needed more ingredients to call it a casserole! Hubby loved it and said it was the best thing I have made in 45 years of marriage!!
Wow, so happy to hear that you and your hubby liked it so well. I love the additions you added, sounds good.
Plan on making this but it’s only hubby and I so I’m wondering how to store and reheat leftovers?
Hi Nancy, You can store this in the fridge and reheat. I would reheat it in the oven to get the crackers warmed up and crispy I think the microwave would make them so soft.
would this turn out ok in the crock pot?
Yes! I have a poppyseed chicken casserole that is very similar to this that I make in the crock-pot and you can follow those directions, https://www.thediaryofarealhousewife.com/slow-cooker-poppy-seed-chicken/
