This simple to make Chicken Fajita Soup full of flavor. With just a few ingredients like salsa, corn, fajita seasoning, and chicken breast, you can make this soup easily for dinner tonight.
No matter rain or shine I will be making my favorite soup recipe all year long. This Chicken Fajita Soup and my Taco Soup are on my menu plan all year long. I could eat them every day.
I actually will make a big pot to have lunch for myself for several days. It’s so simple and tastes amazing. It’s my version of meal prepping and a lot easier in my option.

How to make Chicken Fajita Soup:
This is a really tasty and easy soup to make. Put all of your ingredients into a large soup or stock pot and bring them to boil.
Once boiling reduce heat and simmer until the chicken is cooked through, about 20 minutes. Removed the cooked chicken and shred it.
Return the chicken to the soup and cook for 10-15 more minutes.
Ingredient Notes:
- Chicken Breasts – boneless and skinless. You can use other cuts as long as they are boneless and skinless.
- Bell Peppers – I used orange, yellow and green peppers for this recipe and diced them.
- Onion – yellow onion diced
- Salsa – use your favorite jarred salsa.
- Corn – canned and drained
- Fajita Seasoning
- Chicken Broth
Directions:
Step one: Bring all ingredients to a boil in a large pot then reduce heat and cover.
Step Two: Cook until chicken is cooked through.
Step Three: Remove your chicken once cooked then shred it and return it to the pot.
Time to serve your Chicken Fajita Soup!
I love topping my soups with things that I usually add to tacos.
- sour cream
- fresh cilantro
- sliced avocado
- tortilla chips
- shredded cheese
- diced tomatoes
Can I use precooked chicken?
I have used precooked chicken from my all-purpose slow cooker chicken for this recipe before and it works perfectly.
It will cut your cooking time in half, and you would only need to cook long enough for the peppers and onions to get tender.
Can I make this in the slow cooker:

Otherwise, just add all these ingredients to your slow cooker and allow it to cook for several hours (at least 4-5 hours on high) or until your chicken is cooked through.
Remove your chicken and shred then back into the soup and ready to serve.

Chicken Fajita Soup
Ingredients
- 2 breast Chicken, (skinless and boneless)
- 3 cups Diced bell peppers
- 1 cup Diced onion
- 2 cups Salsa
- 1 can Corn, (drained)
- 1 oz Fajita seasoning, (or to taste)
- 5 cups Chicken Broth
Instructions
- Add all ingredients to a large soup pot. Bring to a boil then reduce heat and cover. Allow to cook until chicken is cooked through (about 20-30 minutes time will vary depending on the size of your chicken breast)
- Remove cooked chicken and shredded. Add chicken back to the pot and allow to cook for 10-15 more minutes.
- Serve topped with sour cream, tortilla chips, cilantro, or avocado slices.
