- Sour Cream – Use your favorite brand of sour cream.
- Cream of Chicken Soup – Just one can is needed.
- Butter – melted.

Cooking a casserole in a slow cooker:
I love my slow cooker. It’s so easy to just add your ingredients and then let it do its thing. I prefer to cook casseroles on low so as to not burn them.
Cooking on high may get it done faster, but for a casserole I feel high heat tends to burn the ingredients.

Do you really just use 2 tablespoons of onion?
Yes, that is not a typo. I know it may not seem like a lot but for this recipe, a little goes a long way.
I have tried the recipe without onions at all and it really changes the taste.

Can I double this recipe? Should I cook it for the same amount of time?
Yes you can! It could need more cooking time but not much. I would cook it according to dictions then add more time as needed.
Can you use frozen shredded potatoes?
Yes that would work
Can I use fresh potatoes? I have some I need to use up. What would happen to the cooking time and would I need more liquid?
I’ve honestly never tried fresh potatoes. The reason I use frozen hash brown potatoes is also due to the small size the potatoes are cubed in as well.
I made it last night with fresh potatoes, 5 hours on high I would check them ever 15 minutes after the first four hours, I did add more seasonings, and cheese as well only had about a cups worth of leftovers out of a 8 quart slow cooker. I would use a liner next time for sure cooked cheese is hard to get out of the crock!
A liner is definitely good advice for this recipe. I need to use them more often.
Did you cube or grate your fresh potatoes, and how many whole potatoes did you use please?
Hi Jennie, If I double the recipe, would I have to cook them longer in the crock pot? And can you really add the hash browns in frozen?
Hi Kim, yes I add them in frozen. If you are doubling the recipe I would add an hour on to the cooking time. Mix and check on it from there.
Could you prep these ahead of time and cook the next day?
Yes! I usually mix it all up the day before Christmas! =)
Can you substitute fresh onion for the frozen onion? If so, how much and which type of onion? Would it have to be sauteed first? I think any of the cream of ( ) soups would work, perhaps not the mushroom, but even that might create an interesting new taste.
Yes fresh onions work and since it is such a small amount and they are cooked for a while you can just diced them and add them like you would the frozen. It would taste different then the original but yes I agree something new to try and any cream of soup would work!
I have been making this recipe for years. We call them holiday potatoes. The only difference is I use cream of celery and no melted butter. It’s a wonderful dish. Also never tried it in a crockpot will try that next.
Making them in the slow cooker was a game changer! Hope you love it!!
Do you need to thaw the hashbrowns first?
I do not!
Have you ever doubled the recipe in your crockpot?
I have not but as long as your crockpot is big enough then it should work well!
Could you make this in an instant pot?
Hi Sherry, I have not made this in the instant pot. I actually do not own an instant pot so I could not tell you. We love it in the slow cooker and it taste amazing. Let me know if you do it in the instant pot I would love to hear about it.
