Slow Cooker Cheesy Potato Casserole has been a family favorite for years. Since I can remember by mom has been making it for Thanksgiving and Christmas dinner. It was always my favorite part of the meal. Making it in the slow cooker frees up the oven so you can cook other things.

How to Make Slow Cooker Cheesy Potato Casserole:

Slow Cooker meals are really easy to make. With this Cheesy Potato Casserole add all your ingredients to the slow cooker, except some of the cheddar cheese.

Mix everything together in the slow cooker and cook on low for 4 hours. When you are almost done and ready to serve add the leftover cheddar cheese to the top of the casserole and allow it to melt. Serve and enjoy!

Ingredient Notes:

  • Frozen Southern Style Hash Brown Potatoes – frozen cubed hashbrowns work best for this recipe.
  • Frozen Minced Onions – Frozen onions are better for this recipe than raw onions.
  • Sour Cream – Use your favorite brand of sour cream.
  • Cream of Chicken Soup – Just one can is needed.
  • Butter – melted.
  • Salt
  • Shredded Cheddar Cheese – some mixed in with the casserole and some for the topping.

Directions:

Step One – Place all ingredients except for 1 cup of cheese into your slow cooker and mix together well then place the lid on.

Step Two – Cook on low for 4 hours.

Step Two (continued) – Top with remaining cheese and place the lid back on then allow to cook for 20 more minutes.

Cooking a casserole in a slow cooker:

I love my slow cooker. It’s so easy to just add your ingredients and then let it do its thing. I prefer to cook casseroles on low so as to not burn them.

Cooking on high may get it done faster, but for a casserole I feel high heat tends to burn the ingredients.

Do you really just use 2 tablespoons of onion?

Yes, that is not a typo. I know it may not seem like a lot but for this recipe, a little goes a long way.

I have tried the recipe without onions at all and it really changes the taste.

Cooking Tips and FAQs:

  1. I have a large family; I need more casserole! Good thing is, you can double this recipe if you have a big enough crockpot!
  2. We are traveling and taking this with us, can I make this in advance? You can make this recipe up in advance. Mix everything together place everything into a food storage container. You can make this up to 3-4 days in advance before cooking! You should use pre-cooked chicken if making this ahead of time before cooking.

How to store leftover casserole:

Store the casserole in an air-tight container in the refrigerator. It should last in the refrigerator for up to 7 days.

You can also freeze this casserole once it is done. Transfer the casserole as best as you can into an air-tight freezer container. It can stay frozen for up to 3 months.

When you are ready to serve it, allow it thaw for 24 hours before reheating. Reheat in the oven at 350 degrees until it is hot throughout.

Ingredients 

  • 32 oz Frozen Southern Style Hash Brown Potatoes
  • 2 tablespoons Frozen Minced Onions
  • 2 cups Sour Cream
