I love making casseroles. It's so easy to mix everything together and pop in the oven. Plus they taste amazing. I know casseroles can get a bad rap but I can't help it but love them. This Ritz Cracker Chicken Casserole is so simple to make. My husband even told me it was his favorite casserole I ever made! That's saying a lot since I've made a lot of casserole days in my day. How to make Ritz Cracker Chicken Casserole:
- Preheat your oven.
- Prepare a casserole dish with non-stick cooking spray and set it aside.
- Mix cooked and shredded chicken with cream of chicken soup, sour cream, and seasonings.
- Add to the bottom of your prepared casserole dish.
- Top your casserole with crushed crackers and melted butter.
- Bake for 20-30 minutes.
Cooking Tip:
This recipe calls for cooked and shredded chicken. When adding this recipe to your menu you can cut out some work by cooking the chicken ahead of time. Ritz Cracker Chicken Casserole
Ingredients
- 4 cups cooked chicken (fully cooked and shredded)
- 10.5 oz cream of chicken soup
- 1 cup sour cream
- ½ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon salt (or to taste)
- ⅛ teaspoon pepper (or to taste)
- 1 sleeve Ritz crackers (crushed)
- 6 tablespoons butter (melted)
Instructions
- Preheat your oven to 350 degrees F. Prepare a casserole dish with non stick cooking spray and set aside.
- Mix cooked and shredded chicken with cream of chicken soup, sour cream, and seasonings. Add to the bottom of your prepared casserole dish.
- Top your casserole with crushed crackers and melted butter. Bake for 20-30 minutes.

I have an old family recipe similar to this. Mine has added diced onion, celery and pimento. Gives a nice flare to it. It's called Chicken crunch casserole. I usually leave out the celery, as my kids don't like it too much, but it yummy any of these ways.. You could use cream of celery to get the flavor there. But I love the added onion and pimento, more depth to the flavors.

What can be a substitute for sour cream??

I have not tried it but I know some people will use plain greek yogurt in the place of sour cream. It would change the taste of this recipe but should have the same texture.

I have a recipe very close to this one. Mine calls for 2 sleeves of Ritz and 8 Tbsp butter. Crush 1 sleeve Ritz and put in bottom of pan and pour 4 Tbsp melted butter over them. Continue on the way you do. I serve this for any function I can, holidays, covered dish meals, or just because. There's never any left😀

I think if you add more then a cup I would add another can of cream of chicken.

Hi Sally! I have not tried this with veggies mixed in, we usually serve them on the side. I think a bag of steamed broccoli would work great mixed in.

I made this as written, except I put Swiss cheese slices over the top of the chicken mixture and then added the cracker/butter mixture. My family loved it. Next time I make it, I am going to add a splash of white wine, just to take the taste to the next level. Thanks!

Whar’s “ non stink” cooking spray ??? I am going to make this with canned, cooked chicken I keep on hand from Costco. Sounds easy and good. Also, what size casserole pan.... 8 x 8 or 9 x 13?

Hi Karen! Sorry that was an error and I updated the recipe. It's non-stick cooking spray. Or anything you use to make sure nothing sticks to your casserole dish. For this recipe I would use an 8x8. I hope you enjoy it!

When making four cups of chicken, about how many chicken breasts would you say that would be?

Hi laura, depending on the size but I usually cook 2 very large chicken breast for this recipe and it comes out to 4 cups. Hope that helps and you love the recipe!

Hi Kara, I think this would be perfect to make the day before. I would suggest waiting though to add the crackers. Leave those and the butter out and just top it when you are ready to bake so they don't get soggy overnight.
