Ingredient Notes:

  • Beef Steak – Choose a cut of steak that benefits from cooking low and slow. Sirloin, round steak, cube steak, or chuck steak can all work well depending on the recipe. Cut into strips.
  • Cream of Chicken Soup – makes the gravy rich and creamy while keeping this slow cooker recipe simple. Cream of mushroom can be substituted.
  • Beef Broth – Beef broth gives the gravy a rich, savory base and adds extra beef flavor as the steak cooks.
  • Brown Gravy Mix – An easy shortcut that adds flavor while also helping thicken the cooking liquid into gravy.
  • Onion Soup Mix – adds great flavor to the beef and gravy.

The best part of this recipe might be having something to soak up all that gravy. Some of my favorite sides include:

FAQs

Can you put raw steak in a slow cooker?
Yes. Steak can go directly into the slow cooker without being cooked first. Browning it in a skillet before slow cooking is optional and can add extra flavor, but it isn’t necessary for this easy recipe.

Does steak get more tender the longer it cooks in a slow cooker?
Cuts with more connective tissue become tender during low-and-slow cooking, but steak can still eventually overcook. Cook it until it’s fork tender rather than automatically adding extra hours.

How do I thicken slow cooker gravy?
Mix cornstarch with cold water to create a slurry, then stir it into the hot cooking liquid near the end. Allow it to cook for another 15–20 minutes until thickened.

Tips for the Best Slow Cooker Steak and Gravy

  • Pick the right cut. Tougher, less expensive cuts like chuck or round steak become wonderfully tender with low-and-slow cooking.
  • Cook on Low. This gives the steak plenty of time to break down and become tender.
  • Don’t add too much liquid. The steak releases additional moisture as it cooks.
  • Keep the lid on. Lifting it lets heat escape and can increase the cooking time.
  • Thicken at the end. Wait until cooking is done before deciding if the gravy needs it.
