How to make St. Patrick’s Day Sugar Cookies:

Step one: Whisk together flour, baking powder, and salt. Once well combined you can set this aside to use later.

Step two: In your stand mixer cream together butter and cream cheese until creamy. If you don’t have a stand mixer you can use a large mixing bowl and your electric hand mixer to cream these ingredients together. Next, add in sugar and continue to mix until light and fluffy. It should turn to a nice light yellow color and be creamy. Last add in your egg one at a time along with your almond and vanilla extract.

Step three: Add your dry ingredients into your mixer slowly with your wet ingredients until well combined. Cover and chill for 1 hour or overnight.

Step five: Preheat oven and prepare a baking sheet with parchment paper.

Step six: Roll dough into balls. I made mine about 2 tablespoons per cookie. You just want to make sure they are all about the same size so they cook evenly. Place them on your prepared baking sheet. Bake for 14-15 minutes then allow to cool on the pan for 5 minutes before allowing them to cool completely on a rack.

Step one: Cream together cream cheese and butter in a stand mixer or with an electric mixer.

Step two: Once your cream cheese and butter is well combined and creamy add in sugar and vanilla and then continue to beat until your frosting is creamy and smooth.

Step three: Add in a small amount of green food coloring until you get your desired color. You don’t want to overdo it so just a small drop, allow it to mix in, then add in more until you get the color you want.

Step four: Once cooked are completely cooled spread on cream cheese frosting and decorate with white sprinkles.

Chilling Time:

For this recipe, chilling is very important. Your cookies will not hold shape otherwise. Make sure to cover with plastic wrap and keep it in the fridge for at least one our or up to overnight.

If you are leaving them in overnight then allow to set on the counter for just a few minutes so they are still cold but you can scoop out some dough.
