My new favorite way to make spaghetti, Taco Spaghetti! A Spaghetti casserole filled with those flavors you love from tacos. Taco seasoning, tomatoes, onions, all mixed in with noodles and Mexican Cheese this easy dinner recipe is going to be something you want on your menu plan soon!
Spaghetti is a staple in my house. This easy Taco Spaghetti has only a few simple ingredients but has a big taste that you are going to love!
This recipe is a great alternative to normal Spaghetti.
You all know I love tacos, and adding the flavors of tacos to a spaghetti casserole like this is a nice change from regular spaghetti dinner.
How to make Taco Spaghetti:
Cook: First cook your ground beef and spaghetti.
Mix: Once the beef and spaghetti are done mix all remaining ingredients together except the cheese and then add to a casserole baking dish.
Bake: Top with the shredded cheese and bake until the cheese is melted.

Ingredients Notes:
- Ground Beef: I used a lean ground beef for this recipe.
- Spaghetti: I used regular spaghetti for this, but you can use Angel Hair if you want. Really any pasta could work for this recipe.
- Olive Oil
- White Onion: that has been diced.
- Garlic: that has been minced.
- Taco Seasoning: Check out my recipe for Homemade Taco Seasoning.
- Rotel: Rotel is canned tomatoes and green chilis. You can use any brand that is similar.
- Mexican Blend Shredded Cheese
- Cilantro: fresh cilantro that has been diced.

Directions:
Step One – Heat oil in a skillet then add diced onion and minced garlic.
Allow to cook for 2-3 minutes then add ground beef.
Season with taco seasoning and cook ground beef until browned.

Step Two – In a separate pot cook spaghetti according to the package directions.
When fully cooked drain and return to the pot.

Step Three – Add seasoned ground beef and Rotel to spaghetti.
Mix it all together well.

Step Four – Preheat oven to 375 degrees F.

Step Five – Add spaghetti to a casserole dish.
Top with cheese and place in the oven for 10 minutes until cheese is melted and bubbly.
Step Six – Once baked top with cilantro and sour cream and serve!

Top this with more taco toppings!
I love to serve this with all the fixings that I would use in tacos.
Top with sour cream, salsa, more cheese, tomatoes, jalapenos or guacamole and enjoy.
I love this with just sour cream, but my family loves to add these other items.

Make this a one pot meal!
You all know I love easy meals with easy clean up. So, this recipe can be made all in one pot. Here is how you can do that.
- Cook your spaghetti in the pot first. Once it is done drain it and set aside
- In the same pot cook your ground beef. Once that is done add all remaining ingredients except the cheese and cook for about 5-10 minutes until everything is hot.
- Add in the cheese and mix up, or just leave it on the top. Once it’s melted serve it up!

Taco Spaghetti
Ingredients
- 1 tablespoon Olive oil
- 1//2 cup White onion, (diced)
- 1 tablespoon Garlic, (minced)
- 1 pound Ground beef
- 1 oz Taco seasoning
- 2 tablespoons Water
- 20 oz Rotel, (2 cans total)
- 10 oz Spaghetti
- 1 cup Mexican blend shredded cheese
- 2 tablespoons Cilantro, (chopped)
Instructions
- Heat oil in a skillet then add diced onion and minced garlic. Allow to cook for 2-3 minutes then add ground beef. Cook and crumble ground beef. Mix in taco seasoning and water.
- In a separate pot cook spaghetti according to the package directions. When fully cooked drain and return to the pot. Add seasoned ground beef and Rotel to spaghetti and mix together well.
- Preheat oven to 375 degrees F. Add spaghetti to a casserole dish. Top with cheese and place in the oven for 10 minutes until cheese is melted and bubbly. Top with cilantro and serve!

Do you drain the Rotel?
Hi Amy! I did slightly drain the Rotel for this recipe. It really depends on how much juice or how wet you want your pasta. I hope you enjoy the recipe!!
I haven’t seen Rotel in Canada where I live, I assume it’s tomatoes?
