Can we talk about how much I LOVED this recipe. A new way to eat a taco is always a good idea. This Tater Tot Taco Casserole is filled with seasoned ground beef, creamy queso, salsa, corn, and topped with tater tots and cheese.

Taco Tuesday anyone? Your family is going to love this fun new taco recipe. I mean if I stick tater tots on top of about anything I could  get my kids to eat it. Tater Tot Taco Casserole

How to make Tater Tot Taco Casserole:

  • Preheat your oven.
  • Prepare your casserole dish with cooking spray and set aside.
  • In a skillet on medium heat oil, diced onion, and garlic.
  • Add your ground beef. Once your ground beef is broken down and completely cooked drain the fat.
  • Add taco seasoning, salsa, corn, and queso sauce.
  • Add all of this to casserole dish.
  • Top your beef in the casserole dish with tater tots.
  • Sprinkle on shredded cheese and bake.
  • Allow to cook for 5-8 minutes then top with your favorite taco toppings.

Serving suggestion:

Top with sour cream, tomatoes, fresh cilantro, and any of your favorite taco toppings.

Ingredients 

  • 1 teaspoon Oil
  • 1 cup Onion, (diced)
  • 1 tablespoon Minced garlic
  • 1 pound Ground beef
  • 1 tablespoon Taco seasoning
  • 16 oz Salsa
  • 15 oz Corn
  • 16 oz Queso sauce
  • 16 oz Frozen tater tots
  • 1/2 cup Shredded Mexican cheese
  • Optional: Sour, cream, tomatoes, fresh cilantro, and any of your favorite taco toppings.

Instructions 

  • Preheat your oven to 375 degrees F. Prepare your casserole dish with cooking spray and set aside.
  • In a skillet on medium heat oil, diced onion, and garlic. Allow to cook for 2 minutes then add your ground beef. Once your ground beef is broken down and completely cooked drain the fat. 
  •  Add taco seasoning, salsa, corn, and queso sauce. Heat and mix together for another 2-3 minutes. Add all of this to casserole dish.
  • Top your beef in the casserole dish with tater tots. Sprinkle on shredded cheese and bake for 40 minutes. Your casserole should be bubbly and cheese melted. 
  • Optional toppings: Sour cream, tomatoes, fresh cilantro, and any of your favorite taco toppings.
