If you need an easy dinner that takes almost no effort, this Slow Cooker Salsa Chicken is one of my favorite recipes to make. It’s simple, flavorful, and made with just a few ingredients, but it can be used in so many different meals.

This is the kind of recipe I make on busy days when I need dinner to basically cook itself. Just toss everything into the slow cooker, and by dinnertime you have tender shredded chicken ready for tacos, rice bowls, salads, sandwiches, and more.

Whether you’re looking for an easy crockpot chicken recipe, meal prep idea, or quick family dinner, this is one of those recipes you’ll come back to again and again.

How to make this Salsa Chicken:

This dinner is easy to make and great for an alternate for Taco Tuesday night. Place your chicken breasts in your baking dish. Top with the salsa and then cover the dish with aluminum foil. Bake in the oven for about 35 minutes. For the final 5 minutes of baking top with the cheese and allow it to melt. Top with cilantro and serve with Mexican Rice.

Ingredient Notes:

  • Chicken Breast – Chicken breasts shred easily in the slow cooker, but chicken thighs also work well.
  • Taco Seasoning – A seasoning packet keeps this recipe quick and easy while adding tons of flavor. Try my Homemade Taco Seasoning recipe.
  • Salsa – Use your favorite salsa and spice level. Chunky salsa adds extra texture and flavor.
  • Colby Jack – shredded.

How to make Salsa Chicken

Step One: Get started by preheating oven 375 degrees F. Prepare a 9×13 casserole dish with nonstick cooking spray.

Step Two: Then season your chicken with taco seasoning and then place in the prepared casserole dish.

Last pour your salsa over the chicken. Then cover your casserole dish with foil.

Baking Directions:

Step Three: Bake for 30-35 minutes until chicken is cooked through. Remove chicken from the oven.

Step Four: Top chicken with shredded cheese and then place back into the oven for 4-5 minutes until cheese is melted.

Step Five: Remove from oven and serve.

Serving Options:

I serve mine topped with fresh cilantro. We like to slice it and serve over cilantro lime rice or in a tortilla shell. Serve it over a taco salad too!

Ingredients 

  • 4 chicken breast, (boneless and skinless)
  • 1 oz taco seasoning
  • 1 1/2 cup salsa
  • 1 cup colby jack, (shredded)

Instructions 

  • Preheat oven 375 degrees F. Prepare a 9×13 casserole dish with nonstick cooking spray.
  • Season chicken with taco seasoning and then place in the prepared casserole dish. Pour salsa over chicken.
  • Cover with foil and bake for 30-35 minutes until chicken is cooked through. Remove chicken from the oven.
  • Top chicken with shredded cheese and then place back into the oven for 4-5 minutes until cheese is melted.
  • Remove from oven and serve. Optional: serve garnished with fresh cilantro.
