    Cheesy Broccoli Ranch Twice Baked Potatoes

    This pregnancy I have been craving potatoes like a crazy person! I could eat them with each and every meal. Since I have pretty much tried them in just about every way the past 8 months I thought something new for lunch would be perfect. I made these Cheesy Broccoli Ranch Twice Baked Potatoes for my husband and I for lunch and we ate them out on the back porch while the kids played in the yard, it was pretty much the most perfect afternoon.

     

    What to serve with twice baked potatoes:

    • Lemon pepper chicken tenders
    • Honey mustard chicken 
    • Slow Cooker BBQ Chicken 
    • Meatloaf
    • Honey BBQ chicken bites

    Cheesy Broccoli Ranch Twice Baked Potatoes

    How to bake a potato in the oven:

    Start by washing then poke holes into your potatoes and then placing them on a baking sheet. I like to wrap my potatoes in foil to keep the moister in so they don't dry out while baking. Bake at 400° for about 1 hour until your potatoes are tender.

    How to bake a potato in the microwave:

    Wash and poke the potato just just like you would for the oven. Of course no foil for the microwave so place your potatoes in the microwave and bake for 5 minutes one at a time.

    How to make Cheesy Broccoli Ranch Twice Baked Potatoes:

    • Wash potatoes and poke holes in them.
    • Cook them in the oven or in the microwave until all potatoes are tender.
    • While potatoes cook steam broccoli and set aside.
    • Allow potatoes to cool then carefully cut them in half and scoop out the insides.
    • Place the insides in a mixing bowl and then set the potato skins on a baking sheet.
    • In mixing bowl with potatoes add steamed broccoli, shredded cheese, sour cream, ranch, salt, and pepper. Mix well together.
    • Spoon this mixture into your potatoes and top each one with some of the remaining shredded cheese.
    • Bake again then serve.

    Ingredients
      

    • 5 medium Russet potatoes
    • 1 cup Steamable broccoli
    • 1 ½ cup Cheddar cheese (shredded)
    • ½ cup Sour Cream
    • ½ cup Ranch dressing
    • ½ teaspoon Salt
    • ¼ teaspoon Pepper

    Instructions
     

    • Wash potatoes and pole holes in them. Cook them in the oven at 400 degrees for 1 hour or in the microwave for 5 minutes (one at a time) until all potatoes are tender.
    • While potatoes cook steam broccoli and set aside.
    • Allow potatoes to cool for a few minutes before handling them (I waited about 30 minutes). Carefully cut them in half (lengthwise) and scoop out the insides. Place the insides in a mixing bowl and then set the potato skins on a baking sheet.
    • In mixing bowl with potatoes add steamed broccoli, 1 cup cheese, sour cream, ranch, salt, and pepper. Mix well together.
    • Spoon this mixture into your potatoes and top each one with some of the remaining ½ cup shredded cheese.
    • Bake for 15 minutes at 400 degrees F. Serve and enjoy!
