    Easy to make and taste great, this Easy Corn Salsa is always on my menu for taco night! 

    Easy Corn Salsa

    When I moved a few years ago I left Chipotle in my hometown. It was almost 8 years before one opened in my small town and I might have jumped for joy and ate there every single day for a week.

    Chipotle was one of my favorite places when I was in high school. My best friend and I loved spicy and Mexican food so we loved getting lunch there.

    I remember her telling me about it after she ate it for the first time and taking me after to try it and it was love at first bite.

    How to Make Corn Salsa:

    This recipe is so simple to make. Start by preparing your corn according to package directions. Drain and place in a mixing bowl. Add remaining ingredients to mixing bowl and mix until well combined.

    Chill in the refrigerate, serve and enjoy!

    Is Corn Salsa Spicy:

    Spicy really different based on each person. While I do not find this recipe to be spicy but a more mild salsa others could disagree.

    If you are worried about this recipe is to spicy use a little fewer Jalapeños. If you are still worried then you can use green chilis instead of  Jalapeños.

    Can I use Fresh Corn:

    Of course, fresh corn will work just as well as frozen. You just need to boil to grill it. Remove it from the cob and use the same amount of frozen.

    Ingredients
      

    • 1 cup Frozen corn
    • 2 oz Canned jalapeños (diced, or to taste)
    • 2 tablespoons Red onion (diced)
    • 2 tablespoons Cilantro (diced)
    • 2 tablespoons Lime juice
    • 1 teaspoon Salt (or to taste)
    • ½ teaspoon Sugar

    Instructions
     

    • Prepare corn according to package directions. Drain and place in a mixing bowl.
    • Add remaining ingredients to mixing bowl and mix until well combined. Chill in the refrigerate, serve and enjoy!
