A great breakfast idea! I love making this Bacon Low Carb Breakfast Casserole and eating it throughout the week for breakfast.

Bacon Low Carb Breakfast Casserole

Breakfast is never an easy task. Why does breakfast have to be in the morning? All that yummy food is served before the sun comes out. I guess that’s why people love “brinner.” All kidding aside, I love breakfast and an easy breakfast recipe. This Bacon Low Carb Breakfast Casserole is just that, easy to make and I feel good eating it. I love making it at the beginning of the week for easy breakfast for the rest of the week. I cook it, let it cool, and then slice and store. Makes those early mornings with three kid much easier. As you all know, you know I love to make casseroles! This new low carb breakfast casserole with bacon is amazing!

Bacon Low Carb Breakfast Casserole Instructions:

Ready to get cooking? Start by preheat oven to 350 degrees F and prepare a baking dish with non-stick cooking spray and set aside. Cook bacon ( I baked mine in the oven) then crumble into pieces and set aside. Prepare a skillet with non stick cooking spray. On medium heat add garlic, peppers, and onions to the skillet and sauté for 2-3 minutes. Place this in your prepared baking dish. Add bacon and chopped spinach on top. Now in a separate bowl whisk eggs with salt and pepper. Pour egg wash over vegetables in baking dish and gently mix to make sure eggs are covering the entire dish. Top with cheese and bake for 45 minutes or until a fork can come out clean and eggs are cooked all the way though.

Cooking Tips:

If you want to make this recipe low carb and lower fat then opt for turkey bacon instead of regular full fat bacon. I used turkey bacon and we loved it.

Ingredients 

  • 10 sliced Bacon, (cooked and crumbled)
  • 1 tablespoon Minced garlic
  • 2 cups Bell peppers, (diced)
  • 1/2 cup Yellow onion, (diced)
  • 3 cups Spinach, (chopped)

  • 1/8 tablespoon Salt and pepper, to taste (I used about 1/8 tsp of each)
