ingredients for the chicken alfredo bake,

Ingredient Notes:

  • Pasta – I used penne for this chicken alfredo casserole and it is my favorite choice because the ridges grab onto all that creamy sauce in every single bite. Rigatoni, rotini, ziti, or farfalle all work great too. J
  • Alfredo Sauce – I prefer to make my own Homemade Alfredo Sauce because the flavor is so much richer and creamier than store bought. But on busy weeknights a good quality jarred sauce works perfectly fine. Bertolli and Rao’s are both great options.
  • Mozzarella Cheese – I use shredded mozzarella both mixed into the pasta and sprinkled on top for that gooey melty finish. You can also mix in some shredded parmesan for extra flavor.
  • Chicken – I used a rotisserie chicken for this recipe which makes it incredibly fast and easy. You can also cook your own using my All-Purpose Slow Cooker Chicken and shred it ahead of time. Chicken thighs work great here too if you prefer dark meat.

How to Make This Chicken Alfredo Casserole Bake

This chicken alfredo casserole comes together in just a few simple steps. The key is cooking your pasta al dente so it does not get overcooked in the oven. Here is everything you need to do:

Step One – Preheat your oven to 350 degrees and grease a 9×13 casserole dish with nonstick cooking spray.

Step Two – Cook your penne pasta according to package directions but pull it about 1-2 minutes early so it is al dente. It will finish cooking in the oven. Drain well and return to the pot.

Recipe Tip

Be careful to not over cook and only cook to al dente before baking since it will continue to cook in the oven and you do not want it to get mushy.

Step Three – Add your alfredo sauce and half of the mozzarella cheese to the pot with the pasta and stir to combine. Make sure everything is well coated in that creamy sauce.

Step Four – dd the shredded chicken and gently stir to coat it in the sauce. Try not to overmix or the chicken will break down too much.

Step Five – Pour the chicken and pasta mixture into your prepared 9×13 casserole dish and spread it out into an even layer.

Step Six – Sprinkle the remaining mozzarella cheese evenly over the top of the casserole. Do not be shy with the cheese, this is what gives you that beautiful golden bubbly top!

Bake uncovered for 20-25 minutes until the cheese is melted and the casserole is hot and bubbly around the edges.

Step Seven – Once it comes out of the oven switch your oven to broil and broil for 2-3 minutes to brown the cheese on top.

Watch it closely so it does not burn. Remove from the oven and let it cool for 5 minutes before serving.

Variations

One of the things I love most about this chicken alfredo casserole bake is how easy it is to customize. Here are some of my favorite ways to switch it up:

Chicken Broccoli Alfredo Casserole – Add 2 cups of frozen broccoli florets to the pasta mixture before baking. Broccoli and Alfredo sauce are a classic combination and it adds a great pop of color and nutrition to the dish.

Spicy Chicken Alfredo Casserole – Add ½ teaspoon of red pepper flakes and a pinch of smoked paprika to the sauce for a little kick. Top with pepper jack cheese instead of mozzarella for even more heat. Great for families who love a little spice!

Chicken Alfredo Casserole with Spinach – Stir in 2 cups of fresh baby spinach with the pasta and sauce before baking. The spinach wilts down perfectly in the oven and adds great flavor and color without changing the overall taste of the dish.

How to store leftovers:

Store leftovers in an airtight container in the refrigerator. It should last about 7-10 days in the refrigerator. To reheat the dish, put back in the oven until heated throughout, or microwave an individual plate.

Can this dish be frozen?

Make the casserole according to the directions above, but do not bake in the oven. Place it in an air-tight casserole dish that has a lid. When you plan to serve it, place it in the refrigerator 24 hours in advance to allow it to thaw. Bake in the over according to directions above once thawed.

Make Ahead: Assemble the casserole but do not bake. Cover tightly and refrigerate for up to 24 hours. Add 5-10 extra minutes to bake time since it is going in cold.
Freezing: Assemble in a freezer safe dish but do not bake. Cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator then bake according to directions.
Storing Leftovers: Store in an airtight container in the refrigerator for up to 3-4 days. Reheat covered with foil at 350 degrees for 20 minutes or microwave individual portions with a splash of water or extra alfredo sauce to keep it from drying out.
Pan Size: Use a 9×13 casserole dish for best results.

  1. If you make your own sauce, do you use mozzarella cheese and parm cheese? My other comment was what size pan. 9×3, as stated, or 9×13.
