The Menu:

This week with the transition back into school we are focusing on really simple recipes with little prep. All these dinners are easy to make and loved by my family, even my kids!

Monday: Santa Fe Chicken Foil Packets these are perfect served as is but you can also serve them with a side of rice.

Tuesday: Taco Spaghetti is a recipe my family loves. My kids would eat spaghettini every day so this one was an easy win. It’s perfect served with sour cream.

Wednesday: Slow Cooker Chicken and Rice Casserole is the perfect dinner to add to the slow cooker during the morning and not worry about until dinner. We like serving this with streamed broccoli on the side but a lot of my readers suggested that they enjoy adding frozen broccoli or peas into the slow cooker with the casserole.

Thursday: This Asian Ground Beef is my go to for busy weeks. With school back in we have been really busy and I love having these dinners on my menu. This is done in 15 minutes or less and we love serving with rice and garlic Asian green beans.

Friday: I love doing a fun and more kid focused dinner on Friday and this week these Pizza Quesadilla’s were a winner with the kids. Serve with a salad.

Saturday: We are doing one of my favorites, breakfast for dinner and making Oven Baked Bacon with scrambled eggs and Yogurt Parfaits.

Sunday: Every Sunday we do a slow cooker recipe and these Slow Cooker Smothered Pork Chops are so good. Serve them with mashed potatoes and green beans.

Here is a meal plan and shopping list for the main recipes. This does not include the optional sides.

I hope you enjoy these recipes! If you make any I would love to see them!
